I believe this is the first real whisky from Guelph, Ontario micro-distillers Dixon's. It is a blend of corn and rye whisky, matured for 3 years in refill casks. Judging by the colour as well as the intensity of the aroma, I'm guessing they have added toasted oak chips to the casks.
Speaking of the aroma, it is very grain-forward but also surprisingly oaky. Sweet citrus, damp wood, a touch of charred logs. Some peppery notes. Only a touch of the astringent, rubbery notes you often find in craft whisky. Quite complex, if not entirely harmonious.
On the palate it is smooth, medium-bodied, with sweet caramel flavours followed by gentle spice and then more of that damp oak. The overall effect is harmonious, notably lacking in sour or bitter notes that mar some first attempts. The finish is short and oak-driven.
Overall this is an impressive debut from my local distillery. The vibrant aroma and smooth, easy-drinking character would make it a good go-to whisky if it was a little cheaper and more widely available.
