My very first Sullivans Cove! Founded in 1994 in Tasmania, the reputation in those early years was not exactly flattering, but in 1999 the distillery was placed under new administration, in 2004 the distillery moved to Cambrigde and by 2007 the tide began to turn. Jim Murray gave their American Oak a big 95/100 in his bible and in 2014 they even won the title Best Single Malt Whisky in the World at the Word Whiskies Awards with their single cask HH0525. The rest is history, so to speak. I taste a single bourbon cask that was bottled in 2010, before the distillery gained name and fame. Deliciously sweet on cotton candy, apricots and vanilla. Applesauce and candied peach, sweet and delicious. Do you sometimes think in colors when you smell a whisky? I can't get the color golden yellow out of my head. The arrival is firm with some wood herbs, but this certainly does not require water. The taste is a great continuation of the nose, with a waxy edge. Very pleasant and accessible. The finish lasts forever and remains sweet and candy-like, while the wood adds a slight spiciness that keeps the mouth completely warm. Well balanced, very clean Australian (well, Tasmanian) whisky.
