My first bottle of anything Kilchoman and I must say I have been enjoying this bottle. Been open around two weeks, and the sweeter notes in the bottle seem to have become more prevalent.
Nose: Sweet pine smoke from a young fire and caramelising sugar still in the pan. Barbecue rib glaze as it caramelises and burns at the edges over a hot bed of charcoal. Finally a gentle scent lingers in the background, the same scent given off by pine nuts as they toast. Wonderful warm nose with both depth and presence.
Palate: A fiery warm welcome which makes the mouth water. Honey smoked ham and pork ribs with chewy barbecue glaze. Sweet and smokey with a touch of sea salt. Smoked paprika rounds off what is a complex, gentle palate which is dominated by sweet smokey notes.
Finish: Beautiful lingering bonfire smoke accompanies what can only be described as avocado in my mind.
Salted caramel ice cream and a swift but strong spicey wood note which lingers a little.
Short to medium finish which is very pleasant but lacks the complexity of the nose and palate.
In conclusion I just have to say that I am really looking forward to trying more from this distillery.
